Most of us would agree that pasta is delicious. However, there’s something else that comes out of cooking pasta – pasta water! What exactly is it?
Pasta water is simply the liquid left after draining pasta. It contains nutrients found in the pasta itself and also has a very low salt content.
Pasta water is often used in recipes as a base for soups and sauces. It can also be used to cook vegetables and meats.

Most people think adding oil to pasta water is a waste of money. However, there are several benefits to using extra virgin olive oil instead of regular oil.
I stopped adding oil to my pasta water because I didn’t want to waste any fat. Instead, I added salt and pepper and let the water simmer until the pasta was cooked.
This method is great if you’re making pasta for yourself but not very practical for larger quantities. It’s also important to note that the longer you leave the pasta in the water, the thicker it gets. So, if you’re looking for al dente pasta, you’ll want to drain it immediately after cooking.

When pasta cooks, its starch turns into a gel-like substance called "starch paste". This starch paste forms a barrier between the pasta and the sauce or other ingredients.
This barrier prevents the sauce from soaking into the pasta and makes the pasta more resistant to absorbing flavors.
Starch paste is especially important when you’re making tomato-based dishes like spaghetti bolognese. The starch paste will prevent the tomatoes from breaking down during the long cooking process.
So, if you want your pasta to absorb less flavor, then make sure not to add any oil to the finished product.
There are two main reasons why extra virgin olive oil helps make better pasta.
First, the high acidity level of extra virgin olive oil breaks down the starch paste barrier.
Second, extra virgin olive oil contains antioxidants that help protect against oxidation. Oxidation occurs naturally over time and causes the quality of food to deteriorate.
Extra virgin olive oil does contain small amounts of polyphenols which may contribute to the antioxidant effect. But, these levels are much lower than those found in green tea or red wine.
It’s worth noting that extra virgin olive oil doesn’t taste good on its own. You need to combine it with other foods to create an enjoyable meal.

These fats help improve blood cholesterol levels, reduce inflammation, and prevent heart disease. Phenols in extra virgin olive oil protect against cancer because they help kill cancerous cells.
The best way to keep the pasta from sticking together is to cook them quickly. If you overcook the pasta, it will become sticky.
To avoid this problem, use a large pot filled with plenty of boiling water. Bring the water to a boil and add 2 tablespoons of salt per cup of uncooked pasta.
Cook the pasta until it’s tender by testing a piece with a fork. Drain the pasta and rinse it under cold running water to stop the cooking process.
