I love to cook. I’m not exactly a chef but I have always loved food.
In fact my grandma used to say I would grow up to be a famous actress/chef or something like that. Anyway I started playing around in my grandmother’s kitchen when I was a little kid. My mom would take me out to the local restaurant with her to get lunch and eat ice cream, and from a young age I always liked cooking.
I’ve been playing around in my kitchen ever since!
In May 2015, I graduated with a Bachelor of Science in Nutrition & Dietetics and a minor in Food Marketing from Colorado State University. After working for an elite sports nutrition company in Denver, I decided to take my talents to a bigger stage by jumping into a small industry that I felt was the best fit for me. This is where I started The Kitchn.
In my kitchen, I like to live by two simple rules – make the most out of what you have, and have fun. I love spending time in the kitchen and sharing with friends, and this blog is a small effort to record recipes, memories, and tips and tricks I have learned along the way to share them with others.
‘Bacon’ This is one of those dishes that I just can’t get enough of! It has been on the menu at least once a week since I made it. It’s a casserole with cheesy bacon and corn.
It’s creamy and hearty and just delicious. It is also pretty easy to make. I used to make this dish all the time when I was a child.
My grandma would make it on a regular basis and we would just devour it with a spoon. My mom would make it for me whenever she got a chance.
I have to admit I’m not much of a fan of casseroles as an adult, but I love this one!
It’s kind of like a baked macaroni and cheese, but with corn in it!
In my opinion, it is the perfect comfort food! If you are looking for a quick and easy casserole recipe that will be a huge hit, this is it! The first step is to cook the bacon.
If you want to get ahead of things, you can do this the night before.
